A delicious summer side dish full of flavorful herbs.
Ingredients:
- 3 pounds red potatoes, washed and cut into 3/4-inch cubes
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 teaspoons Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 small red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1 1/2 tablespoons fresh rosemary, chopped
- 1 1/2 tablespoons fresh thyme or dill, chopped
Directions:
- Place potatoes in a large pot and add enough water to cover the tops. Bring to boil then simmer until tender when pierced with a fork, about 7 minutes.
- Drain the potatoes and let cool for 30 minutes.
- In a serving bowl whisk together the oil, lemon juice, salt and pepper.
- Add the potatoes and fresh herbs; gently stir to combine.
- Cover and chill 2 hours before serving.
