An easy and delicious way to use your fresh garden cucumbers!
Ingredients:
· 12 ounces Persian or English cucumbers, sliced into coins or spears
· 6 sprigs fresh dill, roughly chopped
· 4 garlic cloves, thinly sliced
· 1 bay leaf
· 1 1/3 cups water
· 2/3 cup rice vinegar
· 1 tablespoon sea salt
· 1 tablespoon black peppercorns
Directions:
1. Add the cucumbers, dill, garlic and bay leaf to a large jar (quart or liter size), layering the dill and garlic between the cucumbers, if possible.
2. In a measuring jar, whisk the water, vinegar, salt and peppercorns until combined.
3. Pour the brine over the cucumber mixture, then cover the jar securely with a lid.
4. Shake to combine. If needed, press the cucumbers down so that they are as submerged as possible.
5. Place jar in the refrigerator and leave for at least one day before eating.
