Irish Soda Bread

With a crunchy outer crust and a soft inside, this is a simple recipe that works great as a side to a meal, or with your favorite hot beverage.

Prep and cook time: 55 minutes

Yields: 8 servings

Ingredients:

  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1 1/2 buttermilk

Directions:

  1. Preheat oven to 425 F.
  2. In a large bowl, whisk dry ingredients together; slowly stir in buttermilk, mixing just until dough forms into a rough ball.
  3. Turn dough onto a lightly floured surface and knead it just enough to shape it into an 8-inch oval and about 1 1/2 inches high.
  4. Transfer dough to a piece of parchment and place on a baking sheet. With a sharp knife, cut an X into the dough a 1/2 inch deep.
  5. Bake until bread is golden brown on top, about 30-35 minutes; remove bread from oven and let sit 5 minutes before cutting.
