Old Fashioned Buttermilk Pound Cake

This simple cake is moist and flavorful—delicious on its own or with a topping of whipped cream and berries.

Ingredients:

  • 1/2 cup butter softened
  • 1/2 cup coconut oil
  • 2 cups sugar
  • 4 eggs 
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk 
  • 3 cups flour
  • 1/8 teaspoon salt
  • 2 teaspoons lemon extract
  • 1 teaspoon almond extract

Directions:

  1. Preheat oven to 350 F, then grease and flour a large bundt pan (10-12 cup).
  2. Cream butter and coconut oil; gradually add sugar, beating well at medium speed of an electric trip mixer. 
  3. Add eggs one at a time, beating after each addition.
  4. Dissolve baking soda in buttermilk. 
  5. Combine flour and salt; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Mix just until blended after each addition. 
  6. Mix in flavorings. Blend thoroughly.
  7. Pour batter into a greased and floured pan. Bake for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes then remove it from pan, and let cool completely on a wire rack.
