Ingredients:
- 5 ripe peaches, pitted and sliced
- 1 tablespoon cornstarch
- 1 tablespoon cane sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
Topping:
- 1/2 cup rolled oats
- 1/2 cup flour
- 1/3 cup brown sugar
- 1/4 cup chopped pecans
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup salted butter, cubed
Directions:
- Preheat oven to 400 F and lightly grease a 2-2.5 quart baking dish.
- In a large bowl, combine the peaches, cornstarch, sugar, lemon juice and vanilla, then toss together. Set aside.
- To make the topping, combine the dry ingredients into a separate bowl. Add the chunks of cold butter and work together with a pastry blender until mixture becomes coarse crumbs.
- Pour peach mixture into prepared pan and sprinkle with the crumb topping.
- Place in oven and bake about 25 minutes or until fruit is soft and topping is golden and bubbly.
- Remove from oven and let cool a few minutes before serving. Enjoy with a dollop of whipped cream or a scoop of vanilla ice cream.
