These muffins are a perfect breakfast food, a perfect afternoon snack, or perfect any time of day you feel like something sweet, chewy and nutritious.
Yields: 12 muffins
Ingredients:
- 1 1/2 cups quick oats
- 1 cup milk
- 1/2 cup brown sugar
- 2 tablespoons honey
- 1/2 cup applesauce
- 2 egg whites
- 1 tablespoon oil or melted butter
- 1 teaspoon vanilla
- 1/2 cup flour (whole wheat or white)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh blueberries
Directions:
- Preheat oven to 400 F.
- Line a muffin tin with liners and lightly spray with oil so they won’t stick.
- Put oats in a food processor or chopper and pulse a few times. Transfer oats to a bowl and add the milk. Stir, then let soak for 30 minutes.
- In another bowl combine the brown sugar, honey, applesauce, egg whites, oil or butter, and vanilla; mix well.
- In a separate bowl, combine the flour, baking powder, baking soda and salt; whisk together.
- Combine the oat, milk mixture with the sugar, applesauce mixture; stir well.
- Slowly add in the dry ingredients and mix just until incorporated. Fold in blueberries.
- Spoon into prepared muffin pan and bake for 22-24 minutes.
