Blueberry Oatmeal Muffins

These muffins are a perfect breakfast food, a perfect afternoon snack, or perfect any time of day you feel like something sweet, chewy and nutritious.

Yields: 12 muffins

Ingredients:

  • 1 1/2 cups quick oats
  • 1 cup milk
  • 1/2 cup brown sugar
  • 2 tablespoons honey
  • 1/2 cup applesauce
  • 2 egg whites
  • 1 tablespoon oil or melted butter
  • 1 teaspoon vanilla
  • 1/2 cup flour (whole wheat or white)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries

Directions:

  1. Preheat oven to 400 F.
  2. Line a muffin tin with liners and lightly spray with oil so they won’t stick.
  3. Put oats in a food processor or chopper and pulse a few times. Transfer oats to a bowl and add the milk. Stir, then let soak for 30 minutes.
  4. In another bowl combine the brown sugar, honey, applesauce, egg whites, oil or butter, and vanilla; mix well.
  5. In a separate bowl, combine the flour, baking powder, baking soda and salt; whisk together.
  6. Combine the oat, milk mixture with the sugar, applesauce mixture; stir well.
  7. Slowly add in the dry ingredients and mix just until incorporated. Fold in blueberries.
  8. Spoon into prepared muffin pan and bake for 22-24 minutes.
