No Bake Chocolate Oatmeal Balls

The perfect after-school snack! Easy to make and ready to enjoy in less than an hour.

Prep Time: 15 minutes

Chill: 30 minutes

Ingredients:

  • 1 1/2 cups old fashioned rolled oats
  • 1/2 cup creamy almond butter
  • 1/2 cup honey
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup coconut flakes

Directions:

  1. Place the oats in a food processor or blender and pulse until finely ground.
  2. In a mixing bowl, stir together the almond butter, honey, cocoa powder and salt.
  3. Add the oats and chocolate chips to the almond butter mixture; stir until thoroughly combined.
  4. Scoop out one tablespoon of the mixture at a time and roll into a ball.
  5. Measure the coconut onto a separate plate; roll the balls in the coconut until completely covered.
  6. Place balls on a cookie sheet and freeze for 30 minutes.
  7. Remove from sheet pan and place in a container.
  8. Store in the refrigerator or freezer.

Note: These will keep in the refrigerator for up to one week and in the freezer for up to three months.
