Taking vacant buildings and recreating the space can be a challenge for any entrepreneur. One area family saw an opportunity to take an empty shell in Winchester that used to be Dollar General and turn it into productive space for the community.
The building was purchased by Tipsord’s Turf & Landscape of Winchester, and was separated into two businesses within the shell. In the front part of the building is Papa Subs, a unique eatery for the people of Winchester and those traveling on Old Route 36. In the back of the subway shop are climate-controlled storage units.
The family-owned Papa Subs opened in November 2023 and offers a unique menu for a sub sandwich shop. “We carry gluten-free bread as well as flatbread pizza,” said Sierra Fay, one of the owners. “We also serve breakfast all day, fried mushrooms and french fries.” Some of their most popular options are the cheese steak, chicken bacon ranch, big clubber and Italian stallion.
Papa Subs also caters to large or small groups. The students at Winchester High School can put an order in to the school secretary and Papa Subs will deliver the food to the school. In addition to having a large area for dine-in, the business also has a drive-through. “People can call ahead and place their order for pickup,” Fay added. She also noted that they are located not too far from the interstate exit for Winchester and that they have ample parking for semis and other large vehicles.
Papa Subs just celebrated its 1-year anniversary. It is located at 772 Old Route 36, Winchester. Their phone number is 217-742-6188 and their hours are Monday-Saturday from 8 a.m.-9 p.m. and Sunday from 8 a.m.-8 p.m.
