This chicken salad is loaded with flavor and crunch. Use it as a main dish, or side dish and serve on your choice of bread, or a bed of lettuce. It’s even good enough to stand on its own!
Ingredients:
- 1 pound cooked chicken breast, cubed
- 2 cups seedless red grapes, halved long ways
- 1 cup celery, diced
- 1 Granny Smith apple, diced
- 1/2 cup red onion, finely chopped
- 1 cup pecans, coarsely chopped and toasted
Dressing
- 1/2 cup mayonnaise
- 1/2 cup sour cream, or plain yogurt
- 2 tablespoons lemon or lime juice
- 2 tablespoons dill or parsley, finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Directions:
- Coarsely chop pecans then place in a dry skillet over medium heat and toast for 3-5 minutes, tossing frequently until golden. Transfer to a cutting board or plate and let cool.
- In a large mixing bowl, combine chicken, grapes, celery, apple, onion and pecans.
- In a small bowl, combine all of the dressing ingredients and stir.
- Add the dressing to the salad. Stir until everything is evenly coated.
- Cover and refrigerate until ready to serve.
Note: for extra flavor, grill the chicken instead of cooking it in the oven.
