An easy, delicious way to enjoy fresh garden cucumbers!
Ingredients:
12 ounces cucumber, sliced into coins or spears
1 small red onion, sliced
6 sprigs fresh dill
4 garlic cloves, thinly sliced
1 1/3 cups water
2/3 cup distilled white vinegar
1 tablespoon sea salt
1 tablespoon black peppercorns
1 tablespoon coriander seed
Directions:
1. Add the cucumbers, dill and garlic to a large jar (quart or liter size).
2. In a measuring cup whisk the water, vinegar, salt, peppercorns and coriander seed until combined.
3. Pour the brine over the cucumber mixture, then cover the jar securely with a lid.
4. Shake to combine. If needed, press the cucumbers down so that they are completely submerged.
5. Place jar in the refrigerator and leave for at least one day before eating.
