Irish Apple Cake

This delicious European style cake will transport you to the Irish countryside — just in time for St. Patrick’s Day.

  • 1/2 cup butter at room temperature
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 3 tablespoons whole milk or cream
  • 1 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3 Granny Smith apples, peeled and thinly sliced
  • Confectioners sugar for dusting

Streusel Topping

  • 3/4 cup all purpose flour
  • 1/4 cup rolled oats
  • 6 tablespoons butter, cold and cut into small pieces
  • 1/2 cup granulated sugar

Custard Sauce

  • 6 large egg yolks
  • 6 tablespoons granulated sugar
  • 1 1/2 cups whole milk, half & half or cream
  • 1 1/2 teaspoons vanilla

Directions:

  1. Preheat oven to 350 F. Grease a 9-inch springform pan.
  2. Make the custard sauce ahead of time. Bring the milk to a simmer over medium heat. Meanwhile, whisk egg yolks and sugar until well combined. Drizzle a little of the hot milk into the egg mixture, whisking constantly. Drizzle a little more, then transfer it back into the pan of hot milk and continue cooking. Stir constantly until the mixture coats the back of a spoon. Do this slowly over medium heat. Mixture will become thick and velvety but will not be as thick as pudding. Custard sauce will continue to thicken as it cools, so don’t overcook or it can curdle. Stir in vanilla.
  3. Pour the custard through a sieve (to catch any stray lumps) and into a heat proof bowl. Put plastic wrap over the surface so it won’t form a skin as it cools. Put in refrigerator to chill.
  4. For the streusel topping, combine flour, sugar and oats. Blend the bits of butter into the mixture until texture is course and crumbly. Refrigerate.
  5. Cream together butter and sugar until light and fluffy. Beat in eggs one at a time.
  6. Whisk together flour, baking powder, cinnamon and salt. Fold the dry ingredients into the butter and sugar mixture, along with the milk or cream.
  7. Spoon batter into prepared pan and smooth out. Top evenly with sliced apples. Sprinkle with streusel topping.
  8. Bake for about 50-60 minutes, or until the top is lightly browned and a toothpick comes out clean.
  9. Cool slightly in the pan before removing.
  10. Dust with confectioners sugar and drizzle with custard before serving.
