Ingredients:
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup butter, softened
- 1/3 cup granulated sugar
- 2/3 cup light brown sugar
- 2 teaspoons vanilla
- 1 egg
- 1 1/2 cups rolled oats
- 1 cup semisweet chocolate chips
- 1 cup shredded coconut (optional)
Directions:
- Preheat the oven to 375 F.
- In a medium bowl, whisk together the flour, baking soda and cinnamon; set aside.
- Combine the butter and sugars in a separate bowl and blend until light and fluffy.
- Add the salt, vanilla and eggs; beat until thoroughly mixed.
- Add the wet ingredients to the dry ingredients and blend until fully combined then stir in the oats, chocolate chips and coconut.
- Line a baking sheet with parchment paper and drop rounded tablespoons of cookie dough onto the sheet leaving 2 inches between each.
- Bake for 8-10 minutes; remove from the oven and let cool a couple of minutes before transferring to a wire rack.
